Left Parma early to tour a Parmigiano Reggiano production facility outside the city in San Vitale Baganza.
There was a moment when our guide was talking about imitation Parmigiano Reggiano that I realized Parmesan by Kraft - that grated cheese product we’re so familiar with in American supermarkets - is not related to cheese made in Italy in any way at all.
