Happy Tuesday! Two lovely bloggers told me today that they made Stupidly Simple Snacks recently. The stylish Casey of Casey Culture made sweet potato fries and fabulous Jean of ilikeitinmymouth put her own twist on deviled eggs…

I went to a Foodspotting happy hour a week or so ago and had the pleasure of meeting Amy Cao of Stupidly Simple Snacks! My friends make fun of me for acting like I’m about to meet Angelina Jolie or something whenever I see bloggers IRL, but hey, what can I say? I’m an Internet/blog addict. I’m not really sure exactly how I discovered her snack videos since I’m constantly on Twitter and devouring the blogosphere, but I was so excited and pleased to find that she is every bit as infectiously bright and energetic in person as she is in her videos.
I have been craving deviled eggs like a madwoman lately and immediately thought of Amy’s deviled eggs video. I had to give it a try. Deviled eggs are fairly simple: just hard boil some eggs, slice them in half once you’ve peeled them, mash up the yolks with mustard and mayo, refill the hard boiled whites with the mixture. A dash of paprika will finish it off nicely! I used German mustard, which was more flavorful and complex than regular yellow mustard or even Dijon and loved it. Of course, Amy shows you how to do all this in a much more entertaining way. I’ll have to try the egg blowing method of peeling them next time (you’ll understand once you watch the video) because my eggs peeled rather effortlessly this time around with zero additional steps on my part. Not really sure what I did!

As promised, Stupidly Simple Snacks is back! This week I have my world traveling French friend Nico Alary in the kitchen with me. We were going to make a French snack, but decided they were either too difficult (crème brûlée) or too easy (bread and cheese) so we made one of our favorite desserts instead. Watch it on my YouTube channel and don’t forget to subscribe so you’re notified as soon as new episodes are added!
Sorry I have been so shite (that’s British for ‘shit’) about posting on Tumblr. I am making two videos for Foodspotting this week so am keeping my head down until then. Resurrecting Guacamole

It looks like I never shared my guacamole snack video on Tumblr. Eek!

I filmed this episode last May while I was visiting Jenna in Ecuador. Well there’s no time like the present to resurrect Stupidly Simple Snacks! Happy Cinco de Mayo, everyone.

Also, fun update: just learned that Guactacular was featured in the Village Voice last week and it mentioned that I’d be judging at the guacamole cook-off this Sunday. It’s the third annual Guactacular hosted by Nachos NY, the self-made nacho and nacho topping authorities of New York City. Hooray - more guacamole!

What would you do if you knew you could not fail? Sure, it’s cliche, but it’s a good question. Maybe you’d quit your job, start a blog, or travel more instead of saying you will someday. If I knew I could not fail, I would probably make soufflé.

These are the types of questions my favorite blogger, Chris Guillebeau, asks his readers. I’ve been following Chris’s Art of Non-Conformity blog for over two years and I finally met him in September when he was in town to launch his new book, also called The Art of Non-Conformity. (It’s a good name for a good book. Take a look.)

Since I am a master of Stupidly Simple Snacks and am on a mission to get all the cool people in the world to guest star on the series, I asked Chris if he’d be interested in not cooking on my show. He did, which inspired me to run around my apartment in glee. Together, we made Unconventional Snack Bars, which I messed up the first time, but have recreated with great success on subsequent attempts. If at first you fail, try and try again, right? Yes.

Stupidly Simple Snacks : Caramel Apples for Halloween

I got my ish together in time to film a Halloween-themed snack - hooray! Otherwise, you would’ve had to watch me make Spicy Hot Chocolate, which is the snack video I launched exactly a year ago today. Granted, hot chocolate is delicious, but it’s not exactly appropriate for trick or treat. And now that the snack video is up, it’s time to plan the Foodspotting Halloween dessert crawl happening this Sunday. If you’re in New York, come scavenge for sweets with me!
